Anthriscus cerefolium - Chervil
Chervil is a delicate biennual herb with finely divided, fern-like foliage and a mild aniseed flavour. it is a key ingredient in the French herbs mixture fines herbes. Long valued in kitchen gardens, it grows best in cool conditions and light shade, producing airy clusters of small white flowers in late spring and summer.
Exposure: Best in sheltered or moderately exposed positions; not especially tolerant of strong winds or harsh coastal conditions, though it can cope with light maritime influence in protected gardens.
Size: 30–60 cm tall, with a spread of 20–30 cm.
Soil: Moist but well-drained, fertile, humus-rich soils.
Sun: Partial shade or full sun in cooler climates; benefits from afternoon shade in warm, dry conditions.
Flowering time: May to July.
Uses:Culinary herb and traditional medicinal plant.
Wildlife benefits: The small, nectar-rich flowers attract bees, hoverflies, and other beneficial insects, while the plant can provide a food source for some pollinating species in kitchen and wildlife gardens.
